I just finished my first year of college without a meal plan and I’m not gonna lie, I relied on 90 second rice and Steamfresh veggies more times than I can count. Up until a couple weeks ago I wouldn’t dare challenge myself to make something I’d never made before, purely out of fear that it wouldn’t be edible BUT that has changed. Recently I was craving something fresh and decided that I would try my hand at making up a fresh veggie salad recipe and it turned out better than I could have ever imagined. I love it, my friends love it, it’s an all around fan favorite so if you want to give it a try, here is the recipe!!
3 Cans of Garbanzo Beans
1/2 of a Red Onion
1 Green pepper
3 Roma tomatoes
Drain the garbanzo beans and put them in a large mixing bowl, chop up the half of the onion, the green pepper and the tomatoes and add them to the bowl, mix well so it looks very colorful and blended, then add Italian vinaigrette to taste, you want every piece to have some on it but not me drenched. Then put it in the fridge for about 15 minutes so that it’s chilled and the vegetables can soak up the vinaigrette and serve!!
This recipe could not be more simple and delicious, I recommend it to everyone, especially if you like garbanzo beans like I do! Let me know if you give this recipe a try!
